Working Principle of Electrostatic Filter
1. Stage
The air drawn by the exhaust fan passes through the coarse particle holder metal filter of HORECA HMD series duct type electrostatic filter, where it is purified from large particles.
2. Stage
Particles with the size of 0.3 µm pass through the high voltage electric field region. Here the particles are charged with a positive electric charge.
3. Stage
These positively charged particles are retained by evenly spaced parallel arrays of collecting plates. These surfaces are negatively or positively charged, respectively. Charged surfaces repel these particles while neutral surfaces attract and collect them.
4. Stage
In this way, the oil particles formed during cooking adhere to the aluminium plates. At the same time, it flows into the oil pan at the bottom. Filters and oil pan are cleaned and reassembled periodically.
